Super Vegetable Soup (Quick Version)

In Chapter 4 (Awakening the Senses) of The Chaos Antidote: A Fable About Mindfulness, the women prepare Super Vegetable Soup in silence. They chop, smell and taste as they prepare this soup, filled with fresh vegetables and a tasty broth. Veda reminds them that just as the broth softens the vegetables, our mindful breath softens our mind so it is supple to experience life. I invite you to prepare the Super Vegetable Soup in silence, using all your senses to experience the food and appreciate the cooking process. NOTE: This is a quick version of the original recipe.

Ingredients

  • 1 medium-sized yellow onion, chopped
  • 3 cloves of fresh garlic, minced
  • 32-oz. low-sodium vegetable broth
  • 5-oz. bottle of Tad McBride Sauces Samurai Sauce*
  • 1 packet of Lipton® Recipe Secrets Onion Recipe Soup & Dip Mix
  • 14.5-oz. can crinkle sliced carrots, drained
  • 2 x 15-oz. cans of diced whole new potatoes (or whole new potatoes, quartered), drained
  • 15.25-oz. can of whole kernel sweet corn, drained
  • 28-oz. can Allen’s seasoned cut Italian green beans (or French cut), drained
  • Optional: 12.5-oz. can of chicken breast chunks or 2 lbs. roast beef (shred before serving)

Directions

Chop one medium-sized sweet onion and place in slow cooker.

Mince three cloves of fresh garlic and place in slow cooker.

Add broth, Tad McBride Sauces Samurai Sauce*, packet of Lipton® Recipe Secrets Onion Recipe Soup & Dip Mix, carrots, potatoes, corn and green beans. Stir well.

Salt and pepper to taste.

Mix thoroughly in slow cooker.

Add enough water to cover all the vegetables.

Optional: Add chicken or roast beef (if added, ensure all meat and vegetables are covered by the liquid).

Turn slow cooker on high for 4-6 hours or low for 8-10 hours.

*Tad McBride Sauces Samurai Sauce is optional.
